With Filipino roots and a life shaped by travel across Southeast Asia, Noel Lao brings curiosity, precision, and heart to his cooking. Since beginning his career in 2009, he has honed his craft across pastry and hot kitchens, developing a meticulous approach and a deep respect for flavour and culture.
At LILYMU, Noel reimagines Southeast Asian cuisine through a modern lens — blending tradition, creativity, and nostalgia. His menu celebrates bold, soulful flavours and shared dining, with dishes like the Snapper Goreng inspired by his time in Indonesia.
